We love wacky holidays! I have found that this is a simple way to get kids excited and have a great time. Doing something out of the ordinary, and sometimes just a little naughty... like eating ice cream for breakfast! Tomorrow, the fist Saturday of February, is "Ice Cream For Breakfast Day". How cool is that?
You can never go wrong with ice cream. It is one of my biggest weaknesses. Ice Cream and Peanut M&M's. Yum!! There is a recipe I have been wanting to try for a long time, but couldn't bring myself to do so. It just feels so wrong to place your dessert on the breakfast table. What's Aaron going to think when he sits down for a great start to the day and I plunk a scoop if ice cream on his plate? Forget Aaron, what are my thighs going to think about that?!
I can tell you however, if my kids were still 7 and 10 they would think I was the coolest mom on the planet. Heck, they are 18 and 21 and they still might think that with ice cream on the breakfast table. They might look at me like I have finally walked off the deep end, because I tend to be a little on the "health-nut" side, but then get over it and devour their ice cream.
So, Carpe Dium! We are having ice cream for breakfast tomorrow. Aaron, you have been forewarned. Thighs, we will just have to go for a little longer run. Kids, yes maybe I have put a toe in the deep end. But, lets face it, who wants to play in the shallow end?
Here is the recipe I've had my eye on for a couple of years now. Let's all try it together and then report on what we thought of it. Doesn't sound good to you? Then try your own Ice Cream concoction and then share the recipe, and the results of serving said recipe. I look forward to hearing your stories!
Pear Sundae French Toast
1/4 cup plus 3 Tb. packed brown sugar, divided
2 Tb. butter
1-1/4 tsp ground cinnamon, divided
3 medium ripe pears, pealed and sliced (about 2-1/2 cups)
3 eggs, lightly beaten
3/4 cup milk
1 tsp vanilla extract
1/4 tsp ground nutmeg
6 slices French bread - 1 inch thick
(I will probably be using my homemade cinnamon bread instead)
Ice Cream - of course!
In a skillet, combine 1/4 cup brown sugar, 2 Tb. butter and 1/4 tsp. cinnamon; cook and stir until sugar is dissolved. Add pears; cook until tender.
In a bowl, combine the eggs, milk, vanilla, nutmeg and remaining brown sugar and cinnamon. Dip bread in egg mixture to coat each side. Coat skillet with non-stick spray and cook bread over medium heat for 2 minutes on each side or until golden brown. Top with pear mixture and then ice cream.
