In honor of White Chocolate Day tomorrow, September 22, I am sharing my favorite White Chocolate Macadamia Nut cookie recipe. This is a staple in our house at Christmas time: everyone gets to pick their favorite cookie for me to make and this is always at the top of the list.

Ingredients
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1 cup butter, softened
1 cup firmly backed brown sugar
1/2 cup granulated sugar
2 eggs
2 tsp vanilla
1 - 12 oz - package white chocolate chips
1 to 2 cups macadamia nuts, coarsely chopped
Directions
Preheat oven to 375 degrees.
In a mixing bowl, cream together butter and both sugars until light and fluffy. Beat in the eggs and vanilla. Stir in baking soda and salt until well blended. Gently stir in flour until just combined; fold in the white chocolate chips and macadamia nuts.
Drop cookies by the round Tablespoonfuls onto an ungreased cookie sheet, about 1 inch apart. Bake for 8-10 minutes, or until very lightly golden.
