7-Up Cake

Guest Writer: Amy Hamblin

It is the time of year when we are all looking for good deserts to go with those special holiday dinners.  We cook huge turkeys or hams, mix up bowls full of mashed potatoes and green bean casseroles, spend hours baking delicious rolls but when it all comes down to it we are all most excited for that yummy dessert.  Okay, maybe not everyone but I am at least.

I found a most delicious dessert that not only tastes good but also isn’t too bad for you.  How can you beat that?  I call it 7up cake!  There are only 3 ingredients and it is kid tested and approved.  That isn’t always easy at my house.

Ingredients

-1 cake mix of your choice
Lemon and Yellow are what we have used but I am sure it would taste yummy with any cake.
-1 20oz. bottle of diet 7up
It works with non diet as well if you are opposed to diet
-1 container of light Cool Whip
Again, it doesn’t have to be light

Mix the cake mix with the 7up and bake at 350 degrees for 30 min.  Let it cool and then top with Cool Whip.

It is that easy and so tasty.  Make sure that you put it in the refrigerator if you don’t finish it.  However, it is just as good the next day as it is the first.

Now you have a new and easy recipe to share with your loved ones come the holidays!!
