Adoption Option: Spring Chick Cupcakes

 I made these adorable cupcakes for our Easter party tomorrow.  They are so delicious, they are sure to be loved by not only the kids, but the adults too.  If you need an easy family friendly dessert idea for Easter or for a Spring party, then you ought to give these a try!


I pulled this idea from two of my very favorite cooking blogs.  The recipe for the cupcakes and frosting came from Gina's Skinny Recipes , and the idea to make them into spring chicks came from Our Best Bites .  I hope you enjoy this recipe! It's a fun one to make with the kids.

Pineapple Bliss Cupcakes

1 Box of Yellow Cake Mix
20 oz. can crushed pineapple in juice (do not drain)



Combine both ingredients in large bowl. 
Spoon into lined cupcake tins about 2/3 full.  
Bake according to cake mix directions. Set aside to cool.

Pineapple Fluff Cream Cheese Frosting

8 oz. 1/3 less fat cream cheese
20 oz. crushed pineapple in juice, (completely drain any liquid)
3/4 cup marshmallow fluff



Combine these ingredients in a medium bowl with a hand mixer.
Spread on cooled cupcakes and refrigerate until ready to eat.

Spring Chicks


To make the spring chicks, pour some coconut in a bowl and add yellow food coloring. Mix with a fork until distributed evenly.
Sprinkle coconut over frosted cupcakes.
Place two mini M&M's on for the eyes.
For the beak, cut orange starburst candy into pieces, shape them into beaks, and place them on the cupcake.
