Apple-Blueberry Coffee Cake

Most of us are super busy these days and don't have time to sit down to eat a healthy breakfast. Lucky Charms and power bars seem to be the main stream for most, if breakfast is even eaten at all. However, with a little preparation the night before, you can wake up to an amazing breakfast all ready to go, and, depending on how big your family is, it can keep you going for several mornings.


INGREDIENTS


2 Cups Whole-Wheat Flour
2 Tb. Vital Wheat Gluten
¾ Cup Honey
¼ Cup Butter Softened
1 Cup Low-Fat Milk
3 tsp. Baking Powder
1 tsp. Cinnamon
½ tsp. Salt
¼ tsp. Nutmeg
¼ tsp. Allspice
2 Egg Whites
2 Medium Apples – Finely Chopped
1 Cup Blueberries


OAT STREUSEL

3 Tb. Butter
1 Cup Oats
¼ Cup Whole Wheat Flour
¼ Cup Packed Brown Sugar



DIRECTIONS

Preheat oven to 350° and spray a 9x9 inch square pan with non-stick cooking spray. Prepare the oat streusel by cutting the butter into the oats, flour and brown sugar until crumbly and then set aside. Beat together remaining ingredients (except apples and blueberries) until well blended: stir in apples.

Spread half of the apple batter into your pre-greased pan. Spread on your blueberries and half of the streusel. Top with remaining batter and then the rest of the streusel.

Bake 45-55 minutes, or until knife inserted in center comes out clean.
