Mummy Breakfast Sandwiches

Fun Halloween food isn't just for dinner. I love breakfast and wanted some fun foods in the morning as well, so I came up with this fun mummy breakfast sandwich. Easy, healthy and fun - the trifecta of the perfect holiday meal.






Ingredients:

1 cup fresh spinach
2 egg whites
1 slice of mozzarella cheese - cut into strips
1 whole-grain English muffin
2 olive slices


Directions:

Coat a skillet with non-stick spray. As soon as skillet is warmed, on a medium temperature, throw your spinach in. Cook until wilted - this doesn't take very long, maybe 1 minute tops. As soon as the spinach is wilted, put your egg whites over the top of it and cook for 1 minute. Flip and cook the other another minute or so, until cooked through. If needed, fold egg in half to fit on your English muffin.

Toast muffin. While muffin is toasting, place strips of mozzarella on egg, mummy style and place olives for eyes. This will give the cheese a chance to melt slightly while muffin is finishing up toasting. 

When muffin is done, place egg on top.
