Pancake Poppers

Yesterday the Seahawks game came on in the morning, so instead of having the usual football fare we decided to do a football breakfast. One of the things I made up were these pancake poppers. They were easy to make a bunch at one time, since you bake them in the oven, and were perfect for a breakfast buffet. No leftovers with these guys!



Making pancake poppers is super easy. Preheat your oven to 350 degrees. Use your favorite pancake recipe or mix, and make up your batter: pour evenly into a mini muffin tin, sprayed with non-stick spray. Once your batter is in the tins you can add whatever your favorite pancake fillers are:

blueberries
mini-chocolate chips
cinnamon and sugar
banana
pecans
or, just Plain Jane
 


Bake in the oven for about 8-10 minutes, or until cooked all the way through. I had to use a knife and run it around the edge of the muffin cups to get my pancakes out, but it was pretty quick.


We aren't super fancy in this house, so I just threw them onto a cooling rack, grabbed the syrup and we dug in. However, if I were having a brunch party and wanted to serve these, I would have been a little more careful about putting them on a pretty plate, and set a bunch of yummy toppers next to them: syrup, chopped fruit and whipped cream, and maybe some butter.

These pancakes are so easy and quick that they would also be a great idea to make ahead of time to store in the fridge for a on the go breakfast on a busy morning. Grab a few of these, nuke them in the micro, and off you go.
